Man o War Sauvignon Blanc 2007 #2723

Captain Cook named Man o' War Bay after dropping anchor there during his 1769 voyage. He observed that the kauri growing there would make ideal masts for the Man o' War wooden battleships which formed the basis of British naval supremacy.

With the ambition to grow world-class wines of elegance and power, suffused with a unique sense of place, the Spencer family planted the first vines at Mon o' War Farm in 1993. Today, 106 individual vineyards spread over 4,000 acres are bravely perched on exceedingly steep, free-draining clay hillsides and volcanic hilltops.

Select parcels were hand harvested in optimum condition over ten days each contributing the desired balance of flavour acidity and ripeness in consideration of an overall blend. The wine was fermented in stainless steel with cultured yeast in order to accentuate the natural fruit aromas and characters typical of this variety. A small proportion was fermented in old oak barriques to provide an element of structure to the finished wine.

This estate grown Sauvignon Blanc sourced from the Eastern end of Waiheke Island exhibits classic gooseberry and spearmint characters typical of cool, maritime climate Sauvignon Blanc. The palate is rich and full bodied with a spine of minerality accentuated with clean vibrant acidity. Best served with summer salads or fresh fish.
