It is a hand managed combination of multiple clones of Cabernet franc and Merlot. The wine is deeply coloured and well structured. The aromatics are subtle on opening, with spice and the distinct herbal note of Cabernet franc to the fore. As the wine opens, vibrant blackberry, cassis, ripe plums and sweet spicy oak evolve. Just prior to release this wine was chosen by New Zealand Winegrowers in blind tasting for their international marketing of New Zealand wines. Only two Cabernet Merlots were chosen! See details Ash Ridge Hawkes Bay Cabernet Merlot 2006 Individual batches of grapes were hand harvested separately then crushed/de-stemmed into small open fermenters and inoculated for ferment with selected yeast. The ferments were gently plunged three - four times daily during the period of fermentation and left for a short post ferment maceration. The wines were pressed off and put to seasoned American oak barriques for ageing. The wines were blended after 6 months and returned to oak to age for a further 6 months. The wine was lightly egg white fined and filtered prior to bottling. Vibrant crimson red colour with purple hues with an lovely aroma of ripe blackcurrant and dark fruit with nuances of subtle oak. A very approachable palate shows dark red fruits and spice, accompanied with nicely integrated sweet vanillan oak and soft, silky tannins. Mealy, nutty characters are evident on the nose together with grapefruit, stonefruit, and smoky oak.
